VINIFICATION |
|
All of our cellars are equipped with stainless steel tanks;
in the winemaking area they have tilted bottoms, while in the area used for stocking
whites and rosés before bottling have flat bottoms. |
Advantages of this material:
- Perfect hygiene
- Easy cooling of the harvest (with three
systems by insertion of refrigerated " cooling apparatus ", by water
trickle or by passage in a cooling tank). |
White and rosé wines : after a light pressing, fermentation takes place in stainless
steel tanks, at a low and constant temperature. |
Red wines : De-stemming is usual but not systematic.
Maceration and fermentation take always place in
stainless steel tanks but aging is made in oak " foudres "
(traditional provençal wood tanks).

BOTTLING CHAIN |

The bottling chain is located in
a building which has been carefully studied to ensure the best conditions possible, with
very high level equipment, sterilization and cold treatment. |
