The Sumeire Châteaux are specialized in the production of
red wines for aging. |
According to provençal tradition, red wines age in oak tanks
called " foudres ", from six to twelve months.
A very light oxygenation occurs then, smoothing the wine and softening young tannins. |
Moreover, those aging-cellars being half buried offer a
constant temperature and hygrometry, hence, an excellent preservation and slow maturation. |
After bottling, all of our red wines will rest for a period
of 6 months before being marketed, in order to complete the maturing process. |
